Theresa’s Mexican Vegetable Caldo

Many folks that visit the retreat for a detox then home and continue to detox on their own. One of the most asked questions from them is: How did you get the detox soup to taste so good? Here’s how….

Delicious Detox Soup

Theresa’s Mexican Vegetable Caldo 

1 Onion
6 Cloves of Garlic
½ Head of Cabbage
3 Small to medium Calabza Mexican Squash, if not available use zucchini
squash, or summer squash.
1 poblano pepper diced
2 Jalapenos diced
2 Rutabegas chopped
1 Turnip chopped
3 Stalks of Celery diced
2 Carrots finely sliced
½ Cup Chopped Fresh Cilantro

 

Season with basil, thyme, sage, oregano, red chili powder or cayenne pepper
to taste. Bring to boil vegetables in a large pot covered with water. Add
braggs aminos for salty flavor if desired, or add no-salt. Simmer for about
45 minutes. Strain the broth, add one cup of broth back to the vegetables and
then puree.
